La Tour Château Grand Moulin Corbieres AOC Red

Ground : Rolled pebbles from the terrace of the Orbieu river

Grape varieties:

Syrah 40% - 10 to 15 year old vines. Single guyot pruning.

Carignan 40% - 30 to 50 year old vines. Goblet pruning.

Grenache 10% - 10 to 20 year old vines. Goblet pruning.

Mourvèdre 10% - 10 to 20 year old vines. Single royat pruning.

Cultivation: Plowing of grounds, reasonable phytosanitary protection, respect of natural balances.

Training Syrah on wires, free vegetation for Grenache and Carignan.

Harvesting: By hand, sorted on the vine trunk

Vinification: Sorted in cellar, 100% de-stemming, vinification of blend of grape varieties and soils by level of maturity (sugars, acids, polyphenols). Vatting of 35 days (on average) with a constant maximum pressing temperature of 30°C. Extraction by pumping over with aeration.

Aging: In tank, racked 3 times with aeration and replacement in suspension of fine lees.

Tasting notes: Deep red and purple reflections. Aromas of cool red berries, soft spices, scrublands. Flavours of rich tannins, a delicate and sophisticated wine.

Food matching: Grilled meats, cold cuts, cheeses

Temperature: to taste between 18 and 20°C.

Production: 150000 bottles/ vintage
