Vieilles Vignes Vinified and aged in oak barrels AOC Rouge



Ground:

Clay and limestone, sandstone of Boutenac. Terraces of rounded pebbles from the  Orbieu river.

Southeast exposure.

Grape varieties:

- Syrah 40%. Single Guyot pruning. 25-35.

- Carignan 20% ,. Goblet pruning. 30-80 years.

- Grenache 20%. Goblet pruning. 30-50 years.

- Mourvèdre 20%. Royat cordon pruning. 25-50.

Cultivation:

Plowed ground, reasonable plant protection (respect of natural balances, auxiliary protection).

Syrah and Mourvèdre are trellised, free growing vegetation for Grenache and Carignan. Cultural practices adapted to conditions of the vintage and to ensure the best balance for the stem, good ventilation and good sunshine on the grape clusters, a slow ripening of berries, long and regular.

Harvesting: Manual, sorted on the vine.

Vinification:

Manual sorting on arrival in Cave, a blend of grape varieties and terroirs by maturity level. Length of fermentation - 40 days with a maximum temperature of 30 ° C. Extraction by pigeage.

Aging:

Put in barrels after aeration and resuspension on the fine lees.

Aged two-thirds of time in French oak barrels (12 months) and one-third in stainless steel vats.

Tasting notes:

Deep red color with purple hues. Aromas of black fruits, “garrigue” (scrublands), licorice and strong spices. Dense and powerful. The tannins are soft and the woody, toasty notes make this a powerful and elegant wine.

Food matching:

We savor this wine with dishes in sauce, stews, casseroles and other hearty dishes.

Temperature: Serve between 18 and 20 ° C.

Production: 80,000 bottles / year.
